Nestled in South Downtown, Jacks BBQ is a tribute to North Texas barbecuers. The ol' boy who runs the joint serves up Shiner Bock on tap, complemented by a rich, aromatic smoke that almost smells good enough to eat. The burnt end nachos are a must-try; I have trouble sleeping some nights just imagining them. Although the meat is perfectly smoked, the sauce is a bit unusual. But with such delectable meat, the sauce is secondary to the main star.

Brileys on Lake City

Located on a convenient lakeside location in Lake City, Brileys is a great place to stop by. My daughter works there, so I can give you that full disclosure is excellent. I frequent Brileys due to its proximity and quality. The collards and hush puppies are outstanding, and the Dorfman platter is an unmissable dish. Whatever you choose, you won't go wrong.

Carolina Smoke (Bothell)

Although it's not exactly in Seattle, Carolina Smoke in Bothell is a must-visit for barbecue fans. Owned by a South Carolinian from Edistoe Island, the owner, David, is a master of low and slow cooking, akin to real Southern barbecue. The sauce is served on the side, which is how it should be. You won't find anything as good here in the south, and it's a great alternative if the old BBQ places in Atlanta closed down.

Jeffs Texas Style Barbecue (Marysville)

For fans of Texas-Style barbecue, Jeffs Texas Style Barbecue in Marysville is the top choice. The restaurant is excellent and a go-to barbecue caterer for the Seattle Seahawks. Jeffs offers brisket, chicken, ribs, pork, and sausage with a minimal list of side dishes. The seasoning is so good, the sauce is optional, reflecting the authentic Texas barbecue experience.

Barbecue Smith (Maple Leaf)

Barbecue Smith in Maple Leaf does absolutely a great job with chicken and ribs. They provide a wide range of flavor options to satisfy everyone's taste. While you're in the area, don't miss out on Pig Iron on First, another spot to check out for a great barbecue experience.
